- Add one or two tsp sugar to the chopped strawberries (Don't sweeten the halved berries unless they aren't really ripe.)
- Mix in a dash of port or madeira, to taste. Or, for a non-alcoholic version, add a spoon or two of pomegranate or grape juice.
- With a fork, gently bruise the chopped berries until the juices begin to run and the sugar is dissolved.
