Chicken of the Woods and Other Wild Ingredients

A foodie highlight of the
Wild Food in a Day was the meal prepared by The Anchor's Sophie Dorber, from her own recipes as well as several provided by wild food expert Jacky Sutton-Adam.
The feast included a wild mushroom and parsnip risotto, pictured above, which included slabs of the unusual, bland but meaty textured
Chicken of the Woods a funghi that grows on willow or cherry wood.
The groaning table also included chunks of saffron and polenta bread dressed with cheese and herbs,
Three Cousins Salad, meltingly good local sausages and chunks of grilled lamb, a huge choice of local cheeses and a special,
wildflower scented pudding.
