Definition: The meaning of real ale is as a description of a traditionally made beer, also known as cask conditioned beer. Real ale is not filtered or pasteurized and the yeast used in making the beer remains in the cask or keg in which it is stored and from which it is served. Because of this, real ale continues to ferment in the bask until it is served. Real ale, which should be clear (the yeast settles to the bottom of the container) is often higher in alcohol than a typical beer. Real ales are prized for their variety and character.
